For Goodness Saké — This Week's Japanese Pairing At The Creative Department

This week we're highlighting one of Japan's first female saké brewers and the unusual red rice ferment she's created. Available for the next six weeks at the Creative Department.

Head chef of the Creative Department, Remi Talbot, travels far and wide to find the most unexpected and complimentary drink pairings for our degustation sittings. Each created with just as much thought and consideration as the plated dish, they range from aged wine, rare-spirit cocktails, herb & matcha tea and saké.

This week we're highlighting one of Japan's first female master sake brewers, from the northern tip of Kyoto and the unusual Mukai Shuzo Saké she has developed from red rice.  Matched with our strawberries and cream dish, for its balanced levels of sweetness and acidity, the sake has a complex cherry & vanilla aroma with a unique tart cherry & pomegranate flavour and savoury umami notes.
