Believe it or not, at Messina HQ we make everything from scratch.  Each flavour of gelato has it’s own unique recipe and every addition (brownie, fudge, caramel, cake etc…) is produced and baked in house by our team of pastry chefs.  It’s a hard message to convey; but one visit to our Rosebery HQ or a squiz through our Youtube channel will show you the Messina way.

What’s the Messina Way? Our business was built on the premise of experimentation and making gelato the way it’s supposed to be made.  There is no process too long, arduous or labour intensive. Having recently hunted down a chocolate making machine from Italy and a dulce de leche machine from Argentina; we imported it to our factory in Rosebery so we could make chocolate in it’s purest form and dulce de leche the traditional Argentinian way.

It’s that time of the year again – where good things do come in small packages.

The Brisbane Ice Cream Festival is popping up on the 10th of March, inside the old Peters Ice Cream factory – so you can get all your fave desserts under one roof, or skip the others and just visit us 🙂

We’ve buddied up with Deliveroo to create the ultimate experiential disco infinity room and gelato sundae station to match – so you can continue your edible disco experience throughout the fields of Laneway.

Line up, boogie on into the holographic disco cube and shut the camouflaged door.  You’ll have 1 minute to take a bunch of selfies on our automated photo booth, on exit you’ll leave with printed polaroids and your very own digital GIF,  just in time to make all your friends jealous.

THREE NEW TIM TAM FLAVOURS!

Making our own Tim Tam range last year was pretty darn cool – it’s what dreams are made of right? So we were double chuffed when the Kings & Queens of biscuits at Arnott’s asked us to come back for round two and to launch THREE more flavours with them this year.

With one round of Tim Tam making under our belts already, this time we’ve used some of our Messina specials to inspire…welcome the new flavours: Turkish Delight, Choc Cherry Coconut and Iced Coffee.

We dug back into our flavour archive for the new flavours – some of you may remember Messina Specials such as Persian Rocky Road (cue inspo for Turkish Delight), 1985 (now a Choc Cherry Coconut Tim Tam) or our Coffee gelato, a classic flavour in the cabinet. We tinkered and tailored the flavours with the experts at Tim Tam to turn them into the new biscuits, and they’re down right delicious if we don’t say so ourselves. And seeing as we do like a chilled treat, try keeping them in the fridge and eating them cold. They’ve got snazzy packaging which changes colour in the fridge too. We’ve debated this subject many times in the office – fridge, cupboard, fridge, freezer(?) or desk side drawer…the choice is yours, just get them in your gob.

SYDNEY FESTIVAL – DISCO BISCUITS

Messina’s famous Disco Biscuits are coming to Sydney for the first time via the SYDNEY FESTIVAL Meriton Village.  Part biscuit, part gelato, part disco – these babies are the ultimate textural pairing and DF partner.

Sydney Festival is offering a huge array of ticketed performing arts and music events + there’ll be free performances and Dj’s every night whilst you feast, drink and mingle in the Meriton Village.  Or if you fancy something a little more  extreme; drop into the mini fun park filled with bizarre attractions – a virtual reality Ghost Train, Karaoke Carousel, join an express Dance Party or go for a dip in the Village Pools.

Boogie on into our pop up store from Friday 5th Jan 5pm to get the first taste – we’ll be setup for three short weeks; until Sunday 28th Jan ( and you won’t want to miss out, just have a squiz at those cross sections below).

Welcome…MESSINA ON WHEELS – our newly revamped ice cream van (well gelato van) ready to enhance your summer vibes on Bondi Beach. This piece of retro magic will be rolling down to it’s permanent home on North Bondi Beach every sunny day this summer, so whether you’re taking a dip with the kids, or knocking back some sun downers on the grassy knowl (brah), you can now find our N I N E custom made gelato items on sale to quench your ice cream needs without even leaving the beach.

Our new creations hark back to some of our summer favourites, some of which are still going strong. We’ve recreated them the Messina way, and tweaked the recipe just so, to make sure they are the best of the best on the beach. See the full menu below…

Operating times do vary depending on the weather and school holidays so if you see him, go try the creams of your dreams from our new semi perm site on the beach this summer.
